What happens when you put two people in a room who share a love for cooking, food, wine and bacon? You get cooking friends. That’s what. Friends who have the wildest food ideas and sometimes those ideas become a reality…

Like bacon waffles.

Take some pretty awesome artisan bacon from here (Maple bacon for the yum), add some newly acquired waffle moulds, two sets of brains and, well, some creativity, and you get magic.

For the waffle batter:

3 eggs
410ml milk
240g flour
2tsp baking powder
1/2 tsp salt
110g butter

Melt the butter & mix with the beaten eggs and milk.
Add the flour, salt, and baking powder mixed together and stir well by hand using a whisk until you have a smooth mixture.

Whilst thinking about making the batter, fry off some delicious bacon until crispy, like really, really crispy. Then set it down to cool a bit. Once sufficiently cooled, crunch it up by knife or mortar & pestle and mix into the waffle batter. Add some maple syrup into the batter for good measure.

Pour a mimosa while the waffles are baking in the oven at 220deg celcius for about 8-9 mins (or in a waffle pan) until golden and delicious.

Fry off more bacon until crispy and cut up finely. Set aside

Once waffles are golden and delicious looking, plate up. Top with seasonal berries – we used raspberries, blueberries and figs. Top with the finely chopped bacon, and some more maple syrup.

Serve with bubbles and good company.
