There is nothing more yummy than a freshly baked banana bread with a thick layer of butter. Well, maybe there is. When you add bacon to the mix. Bacon and banana is a well-known combination in the breakfast world, so I decided to try it with baking as well…
Here’s the recipe:
1/2 cup butter
1 cup sugar
2 cups flour
2 tsp baking powder
4 – 6 very ripe bananas
1 tsp vanilla
1/2 tsp salt
Mix the sugar, vanilla and eggs together
Sift the dry ingredients together in a separate bowl
Mush the bananas in another bowl
Combine everything, and mix. Spoon into loaf pans (it makes 2), and back at 180 degrees celcius for 1 hour.
Now, for the bacon twist (if you want to try it)
Fry up about 3 rashers of streaky bacon, until very, very crispy. Once crisped, cut up finely, and cool.
Add to the batter once you combine everything, saving a few bits to the side.
When in the loaf pan, sprinkle a bit of the bacon bits over the bread. And bake as per the instructions.
Once baked, slice up and serve with a good helping of butter.
