sweet & spicy lamb(b)burgers.

Sometimes, the craving is strong for a decent, home-made burger, packed with flavour. I had never made my own lamb burgers before, and experimented a bit with some mexican flavours, to come up with these…

500g lamb mince
(note: these are all whole spices…)
1/4 tsp coriander (heaped)
1/4 tsp cumin (heaped)
1/2 tsp black peppercorns
1/2 tsp all spice berries
1/4 tsp cinnamon
1/4 tsp cloves
roughly 1/2 tsp salt

to bind the meat, either add some egg, or pork mince

crush all the spices until they are fine
mix into the meat, and let it rest for about 1 hour
portion up the meat (I used golf ball-sized portions), and press until it is about 1cm thick
let the patties chill in the fridge for a while to settle

(alternatively, you can use this nifty burger maker from Yuppiechef, which saves you a ton of time!)

To serve:
thinly sliced roma tomatoes
rocket
thinly sliced red onion
and a yummy tomato-chilli relish

and some yummy seeded buns!
